The Experts Are the Best Sources of Wine Info and Recommendations
The tendancy to disparage “wine experts” or “wine elite” grows as the role of social media and peer reviews grow. Yet the fact remains that the experts are the best and most reliable source of information on wine. Folks like Eric Asimov, Robert Parker, Jim Laube, Jancis Robinson, Steve Heimoff, Charles Olken, Dan Berger, Lettie Teague, Jon Bonne and other well known experts are the one’s with the experience to best understand wine and best provide well-founded recommendations and critiques. There is no way around the fact that experience = expertise. It doesn’t matter if you are talkinb about archeology, Rock n Roll, cheese, interior decorating or wine.

Expensive Wine Is Almost Always Better
While I realize that, like beauty, taste is in the palate of the beholder, it is a fact that a more expensive wine is likely to be a higher quality wine. The price of wine is generally dependant upon three things: the cost of production, the supply and the demand. More expensive wines almost always cost more to make because the they use better ingredients (grapes, barrels, winemakers, etc), because the demand for the wines are higher, and the supply is generally limited. I’ve argued in the past that pronouncements of quality are entirely subjective. But within the world of consensus understandings, we will almost always understand that more expensive wines are appreciated in greater degree than less expensive wines.

Few People Know What They are Talking About When It Comes to Terroir
We talk a lot about “terroir” and the taste of the soil in this business and industry. We all submit that translating the terroir into the bottle is paramount to the process. Yet the fact is, 99.9% of folks who talk about this sort of thing could not pick a Russian River Valley Pinot out of a line up that also included a Santa Barbara, New Zealand, and Carneros Pinot. And let’s not even talk about trying to identify a Pinot from one vineyard and a Pinot from another vineyard a mile down the road. The implications of this uncomfortable truth are many, not the least of which is the role that faith plays in the area of wine appreciation.

Natural Wine Isn’t Natural
Lots of talk of “natural” wine these days. More producers, retailers, wine bars and events are dedicated to the stuff. But “natural” is to wine as California Sparkling wine is to Champagne. It isn’t that. “Natural” wine is processed grape juice and the processing and manipulation begins in the vineyard and ends with the marketing.

Ratings Sell LOTS of Wine
Despite the constant din of criticism of ratings and the 100 Point rating system in particular, ratings sell big time. And the 100 Point rating system is a huge driver of sales. If you don’t think so, talk to the winemaker that just got their first 95 point rating from Robert Parker’s Wine Advocate or the Wine Spectator. Then ask them, would you rather have a string of tweets about your great wine or a 95 point rating from Robert Parker.

Driving the California Wine Routes Can Be Dangerous To Your Health
Driving along Highway 29 in Napa Valley, Highway 12 in Sonoma Valley or Westside Road in the Russian River Valley around 5pm on a Saturday can be very dangerous to your health. The problem is that so many folks who have just consumed way too much wine are on the roads. They may have been sipping, but in many cases it has been an all day sipping affair that is in reality and all-day drinking affair. This uncomfortable truth has yet to affect the local hospitality industry in substantial ways, but it just could in coming years when the next terrible tradjedy happens.

Too Much Wine Marketing Relies On The Idea That “You Can Be Better Than Them”
If you drink this wine, if you consume wines from this area, if you visit this wine region, you’ll be a better, more sophisticated person than your neighbor. That, in a nutshell, is the basis of a great deal of wine-related marketing: being a “wine person” makes you a “better person”. It is not an unusual marketing message. In fact, it is a message common to most luxury good products. But it is a little distasteful.

Fresh off of their program for the Lamborghini Aventador, German tuning firm DMC is at it again, this time, with a new tuning package for the Lamborghini Gallardo LP560-4.

Known as the “Toro” program, DMC fitted the Gallardo with a bevy of new modifications, including a lightweight styling kit and a performance upgrade. Talking about the former, DMC gave the Italian supercar new components that are all made out of carbon fiber. These components include a new front spoiler and sword, side sills and skirts, a new rear diffuser, a rear spoiler, a new rear panel, side mirrors, and rounded sills. Rounding out the exterior modifications are a new set of 20″ lightweight forged rims.

Moving on to the performance enhancement, DMC took the Gallardo LP560-4’s 5.2-liter V10 engine and added a new titanium sport exhaust system as well as reprogrammed the supercar’s ECU unit. The result is an increased output of 580 horsepower and 424 lb/ft of torque, as well as a new top speed of 205 mph, up from the 201 mph top speed of the standard model.

Three just-made bouts have been verbally agreed to for UFC on FUEL TV 4 that will feature the best of the UFC’s two lightest weight classes.

At bantamweight, TUF 14 finalist TJ Dillashaw will face British submission specialist Vaughan Lee. Both fighters are coming off very impressive performances in their last outings in February; Dillashaw dominated for three rounds at UFC on FUEL TV in Omaha, while Lee tapped out fan favorite Kid Yamamoto at UFC 144 in Japan.

Also at 135 pounds, Raphael Assuncao will face Issei Tamura. Both men are looking to firmly entrench themselves in the UFC bantamweight division. Assuncao’s first outing at the lower weight was a success and he looks to build momentum and move up the rankings as he did at featherweight. Tamura made his UFC debut in February on short notice and it couldn’t have been better, as he scored a stunning knockout victory.

The UFC flyweight division continues to grow as more contenders enter the fray. UFC veteran Chris Cariaso is moving into the 125-pound weight class along with Josh Ferguson, who competed on the last season of The Ultimate Fighter. The two will meet at the July 11 event.

Powerhouse middleweight wrestlers Chris “All American” Weidman and Mark “The Filipino Wrecking Machine” Munoz will battle in the five-round main event of UFC on FUEL TV, the just-announced July 11 fight night. The news was announced on the April 24 edition of FUEL TV’s UFC Tonight.

In January, the undefeated Weidman replaced Munoz on the UFC on FOX </a>fight card on less than two weeks’ notice when Munoz was injured and forced to withdraw from his bout against Chael Sonnen. Michael Bisping, who’d been slated to fight Demian Maia at that same event, was tapped to fight Sonnen instead, and Weidman stepped in against Maia. Weidman defeated Maia by unanimous decision; Munoz did the same against Maia last June at UFC 131.

The wine industry is not overly prone to using gimmicks to sell stuff. Yet, it does conjure its share. The most infamous gimmick was the “critter wines”, a trend in gimmickry that looks, thankfully, to be done with. Still, there are some old and new gimmicks in the wine industry that really should be done away with:

1. Natural Wine
I fear this one is with us for a long time to come, yet a gimmick it is with no real meaning and, worse, an ideology underscoring it that demands all other wines be denigrated in order for this niche to gain real, honest credibility. We are talking about a marketing term here and very little else. Everything claimed to be spectacular and miraculous and lovely about “natural” wine is very old hat, techniques mastered by many a winemaker over the past 20 years on every continent. Yet, gimmick it is.

2. More Golfer Wines
Yes. I understand that the demographic that tends to indulge in golf also indulges in wine. But do we really need more golfer wines. These are, in almost every case, wines produced by folks who understand winemaking so that the name of a person can be placed on the label that knows little or nothing about winemaking.

3. “This wine will age, but is drinking wonderfully now”
I swore off using this atrocious claim on client’s back labels and data sheets some time ago after I found I couldn’t look myself in the face and felt the need for a shower after writing it. The use of the phrase, all too common, is a gimmick meant to try to appeal to everybody by saying nothing.

4. Another App That Matches Foods with Wines
I lost count of how many such apps for mobile platform now exists. I honestly never understood this fear people seem to have of drinking the “wrong” wine with a certain dish. Yet, this fear is played upon by nearly every app out there trying to help the consumer with gimmickry. Yet, the apps themselves just give steam and legitimacy to the fear.

5. “The Next Napa”
I read just the other day the claim that a certain wine growing region is “the next Napa”. I’ve heard about the next “Bordeaux” and the next “Burgundy” too. Do we really need another Napa, Bordeaux or Burgundy. The gimmick of “the next whatever” is used by marketers who are too lazy to offer some intrinsic value to what is surely a unique region.

If you’re dining out this week, and I certainly hope you are, you might notice a little something extra in your check presenter (you know, that leather-ish thing holding the bill). An appeal for help.

Chef/owner of Takashi (1952 N. Damen Ave., 773-772-6170), Takashi Yagihashi, has family in Japan. “Fortunately, my mother and sister are fine,” he said. “But many people need help.”

So he put little notes in his check presenters, asking customers to consider leaving a donation for the victims of the Japan earthquake. Nothing much, just $5.

“If people don’t (give), I won’t be hurt,” Yagihashi said. “But I thought I’d ask.”

A lot of people left $5. Quite a few left considerably more, and Yagihashi figured more people, more help. So late last week he reached out to about 80 of his fellow chefs, asking if they’d put little notes in their check presenters. He’s not keeping track of which restaurants will participate.

All the money is going straight to the Red Cross in Japan.

So if you see a little note in your presenter this week consider putting that extra fiver to good use.

May 13, 2012 – At some point, you have to wonder what exactly a promoter gets out of booking Bob Sapp to fight. For many of us, that point has long passed. Sapp seems to no have no prayer of victory any longer. He hasn’t won in two years. He hasn’t even been competitive in the same amount of time, his longest fight since then going just 3:04.

His latest display came on Saturday, against the strongman turned fighter Mariusz Pudzianowski in Poland, and this time, Sapp lasted all of 40 seconds before being finished at KSW 19.

You may recall that just a few weeks ago, Sapp was in Slovenia, losing a kickboxing match to someone named Rok Strucl, a result which Wikipedia aptly describes as “KO (Invisible Punch).” That was hot on the heels of his Super Fight League MMA fight with James Thompson, another fight which he lost in short order. Again, for a fair description we go to Wikipedia, where the result is recorded as “Submission (Takedown).”

Against Pudzianowski, Sapp didn’t land a single punch.

About 25 seconds into the fight, you can see him touch his face near his right eye, see blood, and then cover up as Pudzianowski takes him down and wails away for the finish.

He’s not taking a dive, but it hardly seems like an honest effort, either. This from the man who once, many moons ago, had Antonio Rodrigo Nogueira in trouble.

For the record, we should note that KSW 19 did feature a solid co-main event, with Mamed Khalidov knocking out former UFC fighter Rodney Wallace in just 1:55 of the first round.

But back to Sapp, since the start of 2009, the 38-year-old has lost nine of his 10 recorded MMA fights, and eight of his nine recorded kickboxing fights. Everyone deserves a chance to make a living, but there’s got to be a better way for all parties involved.

Sometime, this farcical ride will end, but there will be at least one more stop. Later this week, his international tour of surrender continues with a scheduled fight against Soa Palelei in Australia. Given Palelei’s pedigree in the sport — he’s 16-3 with 6 straight knockouts — don’t expect that one to last much longer than this sentence.
